A quick Pumpkin Rice for family


Pumpkin Fried Rice


Ingredients:

Cooked Rice

Pumpkin –— de-skinned and cut into cubes

Roasted Pork –— cut into smaller pieces

Dried shitake mushrooms –– soaked, drained and cut into cubes

Dried shrimps –– soaked, drained and pat dried

Shallots –– sliced thinly

Garlic - chopped


Seasonings:

1½ tbsp light soya sauce
1 tbsp dark soya sauce
½ tsp salt
Dash of sesame oil and pepper


Methods:

  1. Heat up wok, sauté shallots until fragrant and golden brown. Dish up and set
  2. Heat up wok, sauté dried shrimps with low heat until fragrant. Add in mushrooms and stir-fry for a while. Add in roasted pork and seasoning (soya sauce, pepper, sesame oil) and stir-fry until all well combined. Dish up and set aside.
  3. Heat up wok, put in garlic and then pumpkin, stir fry for a while. Add in water and soya sauce and boil it until pumpkin is soft. Dish up (including the gravy) and set a side
  4. Stir in cooked rice and seasonings until well combined. Add in the fragrant shallots, dried shrimp, mushroom, roasted pork and pumpkin (which prepared earlier) and stir until all are well-mix.
  5. Dish up and garnish with spring onions(optional). Serve.

Cute Banana Muffin for Toddler




I always wanted to make some sweet dessert for my little YiWen, but never have such "Ohmm" until i saw this recipe from Cooking Grave by Amy Ong. Her banana muffins look so tempting! I think my muffins are lacking baking powder. Should put more to make it puff up. :P

I found the muffins a bit starchy. According to my mum, she said i put too much flour. I guess so.. next round, I'll try to reduce it. This is also the first time my hubby gave me a hand in the wet kitchen. He helped me to mix the barter well. Of coz, need to sacrify my ears.. he told me all his hero story on how he taught ppl to make cake/muffin and blah blah blah.. merepek aje.. :P Btw, my hubby loves muffin. He told me he save money during his study time in Europe just to buy a muffin.

Though, i think my muffins has failed (due to starchiness) but my YiWen loves it! Look at how enjoyable she was.. :D She is really a big love of my life.. :)

Sunday Cooking: Herbal Eggs (Char Yip Tan)






Since Sunday, no need to cook for lunch or dinner, so thought of spending my time in my little paradise (wet kitchen) making herbal eggs instead.

Very easy even for first timer.. :) The difficult part is just on seasoning.. you got to make sure the taste of the soup is nice and tasty enough to be absorbed into the eggs.

Ingredients:
1) 1 pack of "char yip tan" herbal&spices. I use JIA JIA LE brand.. not bad! The smell is so pungent!
2) 25 eggs. Wanted to make 30eggs but too bad.. my slow cooker just can't fit that much.. :S
3) Light soya sauce
4) Dark soya sauce
5) Salt
6) Rock sugar

Steps:
1) Hard boil the eggs
2) Crack the eggs shells with spoon
3) Put the herbs and spices packets at the side of the cooker
4) Put the eggs into cooker and pour in hot water until the water level above the eggs
5) Seasoning with soya sauce, dark soya sauce, salt and rock sugar to taste
6) Boil it in at least 4 hours and left it for over night for greater flavour.

HomeMade Chicken Pie with Mushroom Soup





Made this puff on Mother's Day special.. I fed Yiwen with my share, after finished one.. she ran to the wet kitchen and grab one more from the tray and ask me to feed her more.. cute isn't she? hehehe :D

Filling :
1 chicken breast (cut in cube)
1 can mushroom soup (I use Campbell)
5 button mushroom ( chopped in small chunky bites)
1 big potato (cut in cube)
300 gm mixed vegetable
300 gm onions, diced
2 tablespoonful of butter
2 tablespoon plain flour mix with 1/2 cup water
salt & white pepper

Method :
- Heat butter in a pan & saute diced onions till soft.
- Add mince chicken, stir to break the lumps and all the chicken turns white.
- Stir in the mixed vegetable, button mushrooms and potato.
- In another bowl, mix mushroom soup with one cup water, stir until smooth.
- Pour mushroom soup mixture into the chicken, add more water if necessary.
- Add in flour that has been mixed with water. This is to thicken the filling.
- Cook at slow fire.
- Add salt & white pepper to taste.
Spoon in enough filling into aluminium foil cup, cover the top with a piece of pastry. (I used the KAWAN pastry)
Bake @ 160 deg C for about 30 mins or until done.


All-Time Favourite Cintan Mee





Almost every Saturday lunch i will boiled porridge for YiWen and my hubby. But this weekend, i felt bored with porridge.. but instead of cooking 3 dishes home cooking, I want something simpler which will not consume much of my time and also easy to prepare. Went to market, then bum into this CINTAN mee. Found it! Something simple which can turn into very nice yummy lunch. Look at my YiWen.. she loves it.. she finished whole bowl, then while my hubby was eating, she asked him to feed her as well.. While i take for second round, my hubby asked me to save some for him (he had 2 rounds liao.. want 3rd round somemore..!!) How to keep fit like that?? Isks...


Ingredients:

some chopped garlic

some minced chicken (marinate for at least 2 hours with 1tbsp soya sauce, 1tsp sesame oil and 1/2 tsp pepper)

some fish fillet - cut slices.

1 carrot - shred

2 Siew Bak Choy - cut small portion

4 pcs black mushroom -soak till soft and cut thin slices

2 pcs black fungus - soak till soft and cut thin slices

3 packet instant noodles -soak till soft (soak with hot water for speedy result) and drain well

2 tbsp rice bran oil /cooking oil

some bean sprout (optional-I don't really like bean sprout, so i omit this)

Seasoning:

2 tbsp light soya sauce

1 tbsp dark soya sauce

1 tbsp oyster sauce

2 tbsp water

- all mix together

garnish with fried shallot and sambal belacan (optional)


Steps:

1.) Heat the wok and put in 2 tbsp rice brain oil, saute chopped garlic till fragrant

2.) Add in minced chicken and fish fillet .

3.) Add in shredded carrot, Siew Bak Choy

4.) Add in bean sprout, black fungus slices and black mushroom slices.

5.) Add in soaked instant noodle and seasoning.

6.) Dish up and garnish with fried shallot and sambal belacan.

HomeMade Chicken Puff









Recipe:

Ingredient for Filling
1) 1 piece of chicken breast (diced in cube / minced it)
2) Frozen Mixed Vegetable (2 big spoons)
3) Big Onions (Cut)

Ingredients to Marinate Filling
1) Soy sauce
2) Dark Soy Sauce
3) Sesame Oil
4) White Pepper

Ingredient for Pastry
1)Kawan Pastry Puff (Square Type)

Cooking Steps:
1) Marinate the diced chicken breast and leave for 2 hours or more.
2) Heat the wok and add in the cooking oil and onion fried till fragrant then add in the marinated chichken and keep saute till chicken cooked.
3) Let it chicken cool down for a while.
4) 4.) Preheat the oven at 180c .Wrap the chicken to the puff pastry ,egg wash and bake for 20 minutes or golden colour will do.

Nowadays YiWen already started to eat solid food. She loves to drink soup. Just like her mom.. hehe.. So every weekend, I will for sure boil soup for her. She will eat rice with the soup. Usually she will wallop 1 full bowl of it. SiOK!

Today is super busy as need to take care my girl and also help my DH to settle those plants from nursery. Ya.. we bought many plants and flowers to decorate our hs balcony.. next time, i will blog it here. :) So, I didn't prepare much, simple dishes only. Somehow, the soup turned out to be so yummy! I bought the pre-packed herbs from Tesco, and put in half Mah-Lai chicken into it, and of coz i added in some secret recipes too. Hehehe.. not ajinomoto la..!

The pork nuggets are specially for my gal. Since she loves it so much.. :) She hold it and munch it all the ways.. siok seeing her enjoy it. :)

My DH loves petai very much. But he can't take hot spicy food. So i got to revamp a new recipe for him. Easier for me too.. no need to prepare those chili stuff and har-mai..:P

My gal loves the pork nuggets that i made.. She ate 3 pieces.. hehehe.. So happy le.. :P She finished up a bowl of soup with some rice in it. Happy that she loves my cooking.. :)

Dinner on Thursday 14-01-2010

For 5 persons (me, DH, MIL, FIL and little YiWen)

The Steamed Pork with Salted Fish is the nicest. Guess who is the sifu behind me? Hehehe.. Of coz my mom la.. she is a good cook. She cooks simple, but always the best taste. After I got married, I always miss her cooking. Now, with my own kitchen (my paradise corner), i can practise her cooking recipe liao.. Siok!! Somehow, still not as good as her yet.. will ganbatte! :)

Potato & Carrot & Dried Scallops Porridge

This is the porridge that I made last weekends for YiWen. Healthy and with full of vitamins for your lit' one! Try it!

Ingredients:
1 Potato
1 Carrot
1.5 Dried Scallops
Mixture of Brown and White Rice

Steps:
1. Cut potato and carrot into cubes
2. Soak the dried scallops in hot water and once it turns soft, peel it into small slices
3. Boil the rice
4. Put (1) and (2) along with water that used to soak the dried scallops into the mixture of rice
5. Cook and stir until mixture thicken enough to coap spoon. (If you have no time to stir until it thicken, once you notice it turns lumpy, just put into food processor and blend until it turns into puree)

Fruit Purees : Pears

Though this is not the first time YiWen try on solid food. But this is actually the first time she tried on other solid food other than rice cereal and oats! Now she is reaching 6 months, she officially is declaring weaning and I'm sooooo super excited to make her variety of purees to let her taste. Lately I' m so busy collecting puree recipes from the net and I will create a blogroll for all new moms like me to refer. Save your time mah! :)

To start, I chose a simple puree which is Pears Puree. Easy!

I bought 2 pears, and some mini tupperwares from 100Yen Store.

Cut the pears into cubes, and steam it for 10-15mins. Let it cool a bit then pour into food processor and blend until it turn into purees form.

Finally, pour into the tupperware and fridge it. FYI, you can keep fruit and vegetables purees up to 2 days in fridge and 6 month in freezer.
