Long Bean Rice and Chan Choy Soup


I learned this dish from my MIL. Some ppl say it is Hokkien dish, so I asked my mom (since she is Hokkien) whether she is know or not, she said never heard about it. *slap forehead*. Instead, my MIL who is non-hokkien is the one who introduce it to me. Hehehe..

This is a very nutritious and yummy dish. If you lazy to cook for 3 dishes meal, you can try this recipe. I change the recipe a bit to suit my taste.. :)


Long Bean Rice ( cooked in rice cooker)

Ingredients:
Long Beans (cut into 2" length)
Chinese Sausages
Minced Pork Meat
Dried Cuttle Fish (shredded type)
Dried Shrimp (soaked)
Garlic
Shallots

Seasonings:
Light soya sauce
Black soya sauce
Pepper
Lea & Perrins Sauce
Water

Cooking Steps:
1) Heat oil in wok. Add in garlic, shallot, dried shrimps and shredded cuttlefish. Stir fried for a minute.
2)Then add in minced pork and chinese sausage. Mixed well and stir fry until fragrant.
3) Add in long bean and all the seasonings, mixed well and stir fried for 3minutes. Done.
4) Prepare and wash the uncooked rice. Put it into the rice cooker.
5) Transfer all ingredients into rice cooker and add water till it covers rice completely just like how u usually cook rice.
6) Turn on the rice cooker and wait for it to cook automatically.

Lately I been boiling lot of vegetable soup for my family. Last 2 weekends, i boiled Goji Leaves Soup and Amaranth Soup. To me, i feel it is easier to feed my daughter vegetable this way. She loves to drink soup.. and she will eat those green vegetables as well. This time, instead of putting chicken egg, i put in salted egg. It actually taste a lot better.. :)

Chan Choy Salted Egg Soup

Ingredients:
Chan choy leaves
Pork Ball
1 Salted Egg (get rid of the dirt and wash it)
Anchovies
Ginger - 4 small slices
Water

Seasonings:
Salt
Pepper

Cooking methods:
1) Boil water in the pot. Add in anchovies and ginger once water is boiled. Turn the heat to lowest and simmer for 30 minutes.
2) After 30 minutes, scope up all the anchovies and ginger
3) Turn back into high heat and put in pork ball and chan choy and boil for 2-3 minutes.
4) Break and add in the salted egg into the pot and quickly stir it.
5) Finally add, salt and pepper to taste. Done.



My daughter, YiWen loves the rice and soup. You know what, those food that she loves, no need adult feeding. She will sit obediently and eat on her own. Glad she had a good lunch that day. :)

Last Sunday Lunch : 23rd Oct 2010

Bitter Gourd+Carrot+Onion Soup, Worcestershire Sauce Fried Chicken, Onion Omelette, Hoisin Sauce Prawn

Many don't fancy bitter gourd. And I don't know if YiWen likes it or not. So I dare not use it to cook with chicken or omelette as these dishes can't hide those bitterness of the gourd. So, i use it to boil soup this time. At least salt and red dates can actually hide a bit of those bitterness. Plus, it is very good to reduce body heat .. great for my hubby. He always complain got ulcer in his mouth. Of coz la! Don't drink much water and eat lots of snacks outside! I would say this soup turn out to be very tasty.. sweet and little bitter. I felt that the taste is so balance! YiWen drank lots of it. :)

Of all the dishes up there, I ate the onion omelette and soup the most. This weekend prefer to eat non-meat dishes. So most of the meat, my hubby and YiWen wallop.. YiWen ate 2 chicken wings (upper part) and 3-4 prawns. This gal simply loves meat and soup.. good! :)

U know what.. it is a very joyful moment to see your family members enjoying the dishes that you cook. All hard-work paid off.. :)

Weekends Lunch : 16th Oct 2010


Lately i love to eat cooked tomato. Those tomatoes from ABC soup or sweet sour sauce.. all i hentam.. and now I always keep 2-3 tomatoes in my fridge for my weekends cooking. :)

Last Saturday, running out of idea to cook.. hehehe.. if see image below.. then u know liao.. simple dishes only. :P

Saturday Meal: Yellow Bean with tomatoes, Goji Leaves Soup with Pork Ball and Egg, Fried fish with fragrant toppings

Don't know why my hubby said the fish is very nice and fresh. If you see it is not really nicely fried.. muahaha.. skin off here and there.. :P He walloped almost all of it. I only aimed at those tomatoes in the yellow bean and goji leaves soup. YiWen drank lots of soup and at lots of Goji leaves too.. maybe those leaves are soft .. easy to munch :)


YiWen "helping" me to pluck the long bean into shorter length. End up I have to tidy up her mess.. alamak!


Sunday Meal: Old Cucumber soup, Honey Stir-Fried Chicken Breast (Specially for YiWen), Steam Bean Curb with Fragrant Toppings, Stir-Fried Belacan and Dried Shrimps Long Bean


Dessert: Hasma with Red Dates and Gingko Sweet Soup

This is second time i boiled Hasma with Red Dates and Gingko Sweet Soup for my family. Previously I only put 4 grammes to boil.. and my hubby said too little.. some more, I shared it out with parent in law. Lagi la he said not enough. Btw, this soup is good for women, not men.. but he likes the texture so much.. hehehe.. This round, I put double.. 8grammes, and he said very nice! I think he ate 4-5 bowls.. YiWen had half bowl only. Though she loves it, but accordingly to wikipedia, children are not allow to take too much as it might speed up the development of fertility system. I guess i need to stock up more since my confinement period is near.. Will ask my CL to boil this for me.. :) Siok! All good food during confinement.. YUMMY!!

Saturday Lunch - 4/10/10


Since my 7th month into pregnancy, i'm required to go for checkup every 2 weeks. So it is absolutely a big rush for me on the Saturday if need to go for checkup. Got to wake a lot earlier to go to market, prepare all cooking ingredients, marinate meats etc so that once back from hospital, i can start cooking immediately. Of course when i have no time , then i can't prepare 3 dishes meal for my family.. so got to do 1 big pot meal lo.. like "Claypot Chicken Rice". Hehehe.. actually is "Rice Cooker Chicken Rice" coz i don't have claypot yet. Going to get one soon.. :)

Rice-Cooker Chicken Rice
Ingredient: Rice, Half Chicken, Mushrooms, Ginger Slices, Spring Onions
Seasoning: Lea and Perrins Sauce, Light Soya Sauce, Dark Soya Sauce, Pepper, Sesame Oil

Lotus Root+Groundnut+Sweet and Bitter Almonds Soup
Ingredients: Pork loin, Lotus root, Groundnuts, Sweet and Bitter Almonds, Red Dates, Wolfberries, Dried Octopus




Sunday Lunch - 5/10/10


YiWen actually dislike sour food. But to make her not so choosy on her food, i try to cook more with tomato sauce. Tomato sauce at least is not too sour.. it is more to sweetness. After she can accept it, i introduce her sour plum sauce.. hehe.. Suprisingly she can accept it! She ate a lot of the pork ribs.. things that she loves to eat, will require no adult-feeding..she will climb up to dining chair and grab those food she loves.. and she did it onto my sour-plum pork ribs.. hehehe.. glad she can accept it. :)

Belacan Stir-Fried Tapioca Leaves
Ingredients: Tapioca Leaves, Shallots (chopped), Garlic (chopped), Dried Shrimps (chopped), belacan powder (i use maggi)

Deep-Fried Pork Ribs with Sour Plum Sauce and Tomato
Ingredients: Pork Ribs (Deep Fried), Tomato
Marinate Pork Rib: Lea and Perrins Sauce, Light Soya Sauce, Pepper, Corn Flour (only when deep-fried)
Seasoning: Sour Plum (Maggi), Chicken Stock Powder (Maggi), Sugar


Yummy!! YiWen savouring the pork ribs while watching tv.. :)

Saturday Lunch - 9/10/10



Last Thursday, we went to DELICIOUS STEAMBOAT for dinner. It is all-you-can-eat buffet style restaurant. I saw my hubby took 1 packet of udon and had it all by himself. He must be liking it a lot. So, this weekends, I will make him Udon too... but not soupy type but stir-fried.



Stir-Fried Japanese Udon Noodles
Ingredients: 2-packets of Udon Noddles, Marinated Minced Pork, Fish Paste, Carrots, Garlic (chopped), spring onions
Marinate (minced meat): Light Soya Sauce, Pepper, Sesame Oil
Seasoning: Light Soya Sauce, Oyster Sauce, Dark Soya Sauce, Pepper, Water


Hub liked it! :) Yiwen not so interested. She prefer yee-mee.

Additional snack - Nam Yu (Red Fermented Bean Curb) Fried Chicken
Ingredient: Half Chicken
Marinate: Nam Yu, Light Soya Sauce, Pepper, Sugar
Use corn flour only when deep fried
Chili Sauce (I use McDonalds Chili Sauce - my favourite coz it is extra spicy than other chili sauce)

Actually there are a lot more of the NamYu Fried Chicken, but hub took few pieces and when Yiwen saw hub ate the chicken, she also snatched some from the dining table. Luckily i still managed to catch photo of it before they savoured all.. hehehe.. Frankly speaking, not all can accept the taste of NamYu, but luckily YiWen can accept it. Now i can happily use NamYu in my cooking. :)
